Do you love cheese, but can’t handle dairy? This mix is for you! It is a versatile dry mix adapted from my famous Queso Blanco recipe from my first best-selling cookbook, Latin American Paleo Cooking.

I couldn’t keep such a groundbreaking recipe limited to the pages of my book, so in 2017 I published it on my website as Tapioca Cheese, and to this day it is still one of the top recipes on my site.

This dairy-free cheese truly is legit! Unlike other Paleo cheese recipes that came before it, it withstands cooking and melts and stretches just like the real deal, and can be made into either a fresh mozzarella style or a cheddar style (instructions for that variation coming soon).

It holds up to baking or broiling and is perfect on pizzas, in enchiladas, in lasagna, in a grilled cheese sandwich, on nachos, in mozzarella sticks, or anything your cheese-loving heart desires!

Now you can quickly and easily make a batch whenever cheese cravings arise using this convenient mix, which you can call Legit Cheese for short. All you need to make the mix are:

  1. canned full-fat coconut milk (see HERE for coconut-free instructions)

  2. lemon or lime juice, or apple cider vinegar

  3. coconut or avocado oil

  4. a medium pot

  5. less than 15 minutes from start to finish!

Each bag contains enough dry mix to make FOUR BATCHES of cheese, and each batch is a generous four servings, making this mix incredibly budget-friendly compared to buying pre-made dairy-free cheeses from the store.

Each serving of Legit Cheese Mix is just $0.81, and each batch of mix, which makes about one pound of cheese, is just $3.24. An 8 oz package of dairy-free cheese at the store can easily run $5-10+, so making your own at home will save you lots of money.

Not only are the cost savings massive, you can rest assured that there are no unsavory or filler ingredients. Inside the mix bag you’ll find these wholesome ingredients:

  • Tapioca Starch - the extracted starch from the yuca root (also called cassava or manioc). It is the magical ingredient that gives this cheese is properties

  • Unfortified Nutritional Yeast - unfortified because brands that do fortify use synthetic B vitamins, which have questionable bioavailability and safety (source).

  • Sea Salt

  • Granulated Garlic

  • Otto’s Cassava Flour - the whole, unrefined flour made from the yuca root. An excellent replacement for white flour in many recipes.

New Recipes using the cheese mix are coming soon

I unfortunately became sick with COVID-19 on June 11th, and am now 5 weeks in I am still experiencing symptoms, so I am behind on creating and sharing new recipes and alternative preparation methods to make different types of cheese beyond mozzarella style and cheddar style. I had planned to do this work weeks ago, but couldn’t due to completely losing my sense of taste and being unable to work due to being so sick for a month.

But I have plans to provide recipes for all of the following:

  • Queso dip

  • Paleo Enchiladas

  • Paleo Stuffed Poblano Peppers

  • Paleo Jalapeno Poppers

  • Paleo Grilled Cheese Sandwich (using Legit Bread sandwich bread, of course)
