This page will be updated periodically to provide new ways to prepare my Dairy-Free Cheese Mix as well as with recipes for you to use it in.

The instructions printed on the back of the bag makes a mozzarella-style cheese alternative, and instructions for a cheddar style are coming soon.

How to make coconut-free Legit cheese mix

For best results use canned full-fat coconut milk to make the mix.

But, if due to allergies you need to use another non-dairy milk, be aware that you MUST alter the recipe and use significantly more fat to get a rich, creamy, texture.

If substituting with any low-fat non-dairy milk, such as almond, hemp, rice, flax, oat, etc. use 3 tbsp (yes, tablespoons) of coconut oil (ideal) or avocado oil when preparing 1 batch of cheese mix. The rest is exactly the same.

Herbed Fresh Mozzarella preparation instructions

Prepare the mix exactly as instructed on the bag, but simply add the following to the pot:

  • 1¾ tsp dried oregano

  • 1¾ tsp dried basil

  • ¾ tsp freshly cracked black pepper

  • 3 cloves of garlic, minced

Sliceable Variation Instructions

Prepare the mix as instructed on the bag, and add the following:

  • 1½ tbsp gelatin

Sprinkle gelatin slowly on top of the ingredients in the pot to allow it to “bloom” a bit (soak up liquid) before beginning to stir. This prevents clumps of gelatin from forming.

Adding gelatin also improves the macronutrient profile by adding protein.

Instructions to make smaller batches

Each batch of cheese (made using one 13.5oz can of coconut milk) makes just over 1 lb of dairy-free cheese. If you prefer not to make that much at once, here is a quick cheat sheet for how much mix to use for smaller amounts of dairy-free milk:

Note: these amounts are rounded to the most appropriate common measurements. It is better to round down for smaller volumes of coconut milk.

  • 1/4 cup coconut milk -> use 1 tablespoon plus 1¼ teaspoons cheese mix

  • 1/2 cup coconut milk -> use 2 tablespoons plus 2¾ teaspoons cheese mix

  • 3/4 cup coconut milk -> use 4 tablespoons plus 1¼ teaspoons cheese mix

  • 1 cup coconut milk -> use 5 tablespoons plus 2¾ teaspoons cheese mix
